1. In large bowl, shred salmon, set aside.2. Thinly slice scallion, add to salmon.3. Chop carrots, add to salmon.4. Mince oregano, add to salmon.5. In a small bowl, add lemon juice, mayo, pepper, paprika, garlic and eggs, mix.6. Add wet mixture to salmon mixture, mix thoroughly.7. Add 2 cups of oatmeal to salmon mixture, blend until oatmeal is moistened.8. Heat a large skillet over medium heat, at the same time, make 14 cakes, pat over the remaining oatmeal.9. Add 2 Tbsp of EVOO to skillet, allow to warm.10.
