2 C. Wirthy& Company Salmon Filets, blackened (Sam's club) (cooked and flaked)

1 tsp olive oil
1 clove garlic, mince or pressed
1/2 cup onions, chopped
1/2 cup red bell pepper, chopped
8 ounces mushrooms, chopped
7 TB of light 1/3 less fat chive and onion cream cheese (1/2 tub), softened
1 TB brummel and brown
8 sheets phyllo dough
Oil spray

Here is how you make Salmon Wellingtons:

Preheat oven to 375 degreesSaute vegetables in olive oilover medium heat until softened.Combine salmon , cream cheese and veggies in small bowl.For each wellington use two phyllo sheets, folded in half and stacked on top of each other. Work with one sheet at a time and make sure remaining dough stays covered with a damp towel to prevent drying out, spray dough with oil spray, like pam. You could also brush with butter (real butter) or olive oil for additional calories/fat.Measure out 1/2 cup of salmon filling for each wellington, place in middle of dough and fold sides over to make square packet.
