2 Tbls vegetable or chicken broth
1 sweet bell pepper, diced
1 small zucchini, diced
1/2 large red onion, diced
7 eggs
1 14 oz can pink salmon, drained
1/4 tsp garlic powder
1 tsp dried basil or 1 tbls fresh basil
salt and pepper to taste

Here is how you make Salmon frittata:

Preheat oven to 350F. Heat vegetable broth in a stainless steel skillet on medium-high. When broth begins to steam, add the bell pepper and onions. Cover and saute 3 minutes. Add zucchini, cover and saute 3 minutes. While veggies are cooking, wisk together eggs, salmon and spices. Pour egg mixture over sauted veggies, cover and reduce heat to medium. Cover and cook on the stovetop approximately 10-15 minutes or until outer egg mixture is cooked. Place pan in oven and bake frittata for approximately 15-20 minutes more. If middle of frittata is still uncooked, it may be finished off under the oven broiler for 5-10 minutes.Cut into wedges.
