3 Tbs butter
1 cup mushrooms, slice
1/4 cup onions, minced
1 clove garlic, minced
3 Tbs flour
1 cup 2% milk
1/2 cup white wine
1/2 cup swiss or gouda cheese, grated
1/2 tsp thyme (1/4 tsp if using dried)

Here is how you make Salmon gratin:

Melt 3 T butter. Add sliced mushrooms, garlic and onions. Saute until mushrooms are tender. Add thyme. Set aside. Add flour to butter and wisk until slightly golden. Wisk in the milk and liquid from salmon. Cook until thickened. Add wine and cook for 3 minutes. Break salmon up slightly leaving it in small chunks Stir into sauce, adding mushroom mixture.
