Preheat oven to 350?F. Rub pesto over salmon fillets. Top with olives, sun-dried tomatoes and feta cheese. Bake for 20 minutes. Boil water in saucepan; while it boils, rinse quinoa. Add quinoa to boiling water and cook for about 10 minutes or "al dente." Strain cooked quinoa and let cool. Chop carrot and cilantro.
