1 (28 ounce) can Las Palmas Red Enchilada Sauce
1 bunch green onions chopped
10 medium size corn tortillas
12 ounces of Monterey Jack Cheese


How Do I Make Beef Enchilada's in Red Sauce?

Here is how you make Beef Enchilada's in Red Sauce:

1.Brown meat in a saucepan at medium heat. Add taco seasoning and water, cover and lower to simmer for 30 minutes.2.In a saucepan, heat sauce on low. Spray a 9x13 or two 7x11 baking dishes with Pam. Use a plate to make the enchiladas on.3.Drain meat until all fat and water is gone. Place one tortilla in sauce, make sure its completely covered with the sauce, wait about 30 seconds or until the tortilla is limp. Remove tortilla using a spoon with holes in it, so the sauce will drain back into the saucepan, put the tortilla on the plate. On one end of the tortilla, add 2 tablespoons meat, 1 tablespoon onion and 1 tablespoon cheese. Roll the tortilla up to form the enchilada, arrange in the baking dish. 4.After all enchiladas are made, sprinkle the remaining onions and cheese on top of each enchilada. Cover completely with left over sauce. Bake uncovered 30 minutes in oven @ 350 degrees.
