1/2 cup dry red wine (or more beef broth)

Brown beef cubes in olive oil over medium heat. Turn cubes frequently to ensure even browning. Add the onions and cook 2 minutes longer. Stir in mushrooms and garlic. Reduce heat to medium low and sauté until mushrooms are browned. Combine flour, thyme, pepper and nutmeg in a small dish. Sprinkle over the meat and mushroom mixture, stirring well. Stir in the red wine and beef broth. Stir until liquid comes to a boil and begins to thicken. Reduce heat to low, cover loosely and simmer for 20 minutes. Serve over rice.
