1 lime, zested & juiced
2 lemons, zested & juiced
2 stalks scallions, sliced thin or diced
1 t olive oil
1 T soy sauce
.25 C juice from canned mushrooms
1.5 C coconut juice (will need at least 2 coconuts
for enough juice)
4 Mangoes, diced
Black Pepper to taste

Here is how you make Mango Coconut Sauce:

1) Open at least two eyes of coconut(s). Drain juice. Set aside. Only the meat of one coconut is required for the recipe, but one coconut does not have enough juice for the recipe. Though the nutrition facts include the info from one coconut, make sure to pick or buy two.2) Bake coconut(s) at 350 for 20 minutes. This makes meat removal easier.3) Crack open coconut(s). You can remove the brown skin, or leave it on for more fiber.4) Grate coconut meat and set aside.5) zest lime and lemons. Set aside. 6) squeeze juice from both citrus. Set aside.7) In wok, bring to a boil: oil, soy sauce, mushroom juice (juice only - use mushrooms in side dish if desired), coconut juice, & pepper to taste. 8) Add scallions and half of citrus zest.9) Boil 2 more minutes, then remove from heat.Serve on top of fish, shrimp, or chicken.
