Makes 4 servingsCut the salmon into serving size pieces. Salt and pepper the salmon. mix the horseradish and egg yolk on a plate and the parsley and breadcrumbs on another. Dredge the salmon, skin side up, first in the horseradish mixture, then in the breadcrumb mixture. Heat a saute pan to medium high and melt the butter.Saute the salmon in the butter, breaded side down for about three minutes. Transfer to a 350 oven for 6-10 minutes depending on the thickness of your fillets. For the sauce:Reduce the cream in a saucepan for a few minutes until it begins to thicken, add the remaining ingredients and bring to a simmer.
