In a 350' oven, toast the walnuts until golden brown, but not burnt (5-10 minutes). Bring a large pot of water to a boil. Then cook the pasta.until al dente. While the pasta is cooking, make the pesto sauce as follows: Measure the basil leaves by packing them in a cup measure until you get 1 1/2 cups. (approximate weight = 2.5oz) Rinse the basil leaves and dry using a salad spinner if available, to remove excess water. In a blender, place the basil leaves, grated parmesan, garlic, Extra Virgin Olive, and salt. Puree until completely smooth. Taste and adjust salt if needed. When the pasta is completely cooked, drain it and add it to a large saute pan (12") with the pesto sauce, to warm it gently and bring out the flavors. This recipe yields 14 (1 1/2 cup servings).I usually like to brush a bit of pesto sauce on some boneless chicken breasts to serve along side the pasta., but it would also work well with shrimp.
