Here is how you make Pork Tenderloin with Cranberry Pan Sauce:

Preheat oven to 400In a small bowl whisk together the chicken broth, cranberries, ginger and mustard. Set aside. Season the pork with salt and pepper. Heat the oil in a large non stick skillet over medium heat add the pork and brown on all sides. Place the meat on a baking sheet and roast in the oven for twenty minutes or until meat thermometer reads 145. cover pan and let meat rest for 10 minutes. While doing that-prepare the sauce. add the garlic to the skillet and saute for 5 minutes. Add the broth mixture, orange juice and vinegar and cook over low heat for 5 to 8 minutes. This will be when the cranberries plump slightly. At this point increase the heat slightly and stir in the jam and swirl the butter in the sauce before serving. Makes 4 servings.
