6 chicken thighs, skinned

juice of 1 lemon
juice of 1 orange
1/3 c. brown sugar
1 tsp. cayenne pepper
1 tbsp. red pepper flakes
1 tbsp. Sriracha or hot sauce
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/8 tsp. ground black pepper
1 tbsp. arrowroot powder mixed with 2 tbsp. water

Here is how you make Grilled Brinned Drumsticks with Sweet/Spicy Citrus Sauce:

Bring ingredients for the brine together and boil. Cool. Add chicken legs and thighs to a large zip-top bag or a large plastic or glass bowl. Add the cooled brine and refrigerate 12 to 24 hours. Rinse and pat dry.Heat a grill pan over high heat and cook chicken in a couple of batches the meat is browned well. Remove pan from heat. Temporarily remove chicken. De-glaze drippings with hot water and reserve for the sauce. (If drippings are too charred, substitute two chicken bullion cubes for the drippings.) Place the grill-pan back on medium heat. Add the chicken (you can now crowd the pan) Grill thirty additional minutes on each side rotating chicken around the pan for even cooking. If smoke is an issue, cover the grill pan with a lid for a few minutes and reduce heat slightly.Mix the lemon and orange juices with the pan drippings in a small saucepan. Bring to a boil and reduce to a simmer for a couple of minutes. Strain bits of meat from sauce if desired. Then add the next seven ingredients for the finishing sauce into the pan. Bring to a boil over high heat. Reduce heat and simmer five minutes. Add the arrowroot and bring to a boil stirring constantly.
