This is the simple, slowly cooked tomato sauce that my Aunt Bunny learned from the Sicilian ladies at her Catholic church in San Jose, California. It's easy to make and uses mostly store-cupboard and pantry ingredients, yet it's totally authentic. This recipe makes a very large batch, with at least eight servings, and is great over polenta, pizza and, of course, pasta.

1/4 cup Extra Virgin Olive Oil
2 cups Chopped White Onions (about 2 or 3 small/medium onions, or 1 very large onion)
2 large cans (2x560grams) Crushed Plum Tomatoes
1 Medium Carrot, grated (optional)
1 tsp. Salt (to taste)
1 tsp. Sugar
1-2 Bay Leaves, dried or fresh
Pepper (to taste)


How Do I Make Bunny's Slow-cooked Sicilian Tomato Sauce?

Here is how you make Bunny's Slow-cooked Sicilian Tomato Sauce:

Makes about 8 half-cup servings. 1. Have the onions chopped and ready (they don't have to be pretty and you can do them in a food processor, it's a matter of personal taste).2. Heat the oil in a large saucepan (or large heavy-bottomed pot) over medium heat. 3. When the oil is hot, add all the onions, turn the heat down to medium-low, and cook for 10 minutes or until the onions are very transparent and soft, stirring frequently to avoid burning or browning.4. Grate the carrot (or add the pre-grated carrot, whichever strikes your fancy) into the pan, give it all a good stir and cook for 1-2 minutes more.5. Add the tomatoes straight from the can, the bay leaf, salt and sugar, stir and turn the heat up to medium or medium-high.6. Let the sauce bubble for about five minutes, then turn the heat back down to low and cover (otherwise it's likely to spray tomato on your stove), leaving to cook for about an hour, checking and stirring occasionally.7. After an hour or so, season your sauce to taste, remove the bay leaf (or warn your guests) and serve. Note: This recipe provides more than enough sauce for two dinners, can be doubled (if you have extra pots) or halved, and is great refrigerated or frozen and re-heated. In the fridge it lasts about 3 or 4 days. If it's left to sit (or refrigerated) the flavors blend and become mellower.Lidia Bastianach (of Lidia's Italian Table on PBS) has this recipe: once the sauce is made, take half, add a little water and add four cobs of sweet corn. There should be enough liquid to cover the corn about three-quarters of the way up. Cover and cook over medium heat until the corn is done, then serve.
