I like Healthy Choice Fresh Mixers a lot but as a vegetarian, the choices are limited and low on protein and at $3/each, they weren't exactly budget friendly especially if I had to add my own protein. SO I made my own -- and it was delicious so I am giving you all the recipe. Authors Note: This is not a low sodium food. Fresh tomatoes could really bring down the salt content but I was throwing it together before work.

combine 3/4 c. whole grain rotini, 1/4 c. each type of tomatoes, 1/3 c. Crumblers, 1/4 c. mozzarella and a 1/4 c. of water in a microwaveable container (I used the 3 c. Rubbermaid red rubber lidded style). My pasta soaked in that liquid for about 3 hours before I heated it up for dinner at work -- I would assume that step is important for the cooking time of 4 minutes, 3 minutes covered, 1 minute uncovered. Then I drained it a little and it was cheesy gooey amazingness. That burned my mouth wicked bad so I recommend letting it set for about 5 minutes when its done.
