1 jar (12 ounces) pickled jalapeno peppers, drained and chopped
1 can (15 1/4 ounces) whole kernel corn, drained
1 cup (4 ounces ) shredded cheddar cheese
1 cup baked corn chips, crushed

Here is how you make Hominy Sausage Bake:

In a Dutch oven, brown sausage in oil; drain and set aside. In same pan, stir in beans and rice mix, water and cayenne. Bring to a boil. Reduce heat; cover and simmer for 20 - 25 minutes or until beans and rice are tender, stirring occasionally.Transfer to a baking dish. Layer with hominy and sausage; top with peppers and corn. Back, uncovered at 350 degrees for 30 to 35 minutes. Sprinkle with cheese; bake 5 minutes longer or until the cheese is melted. Sprinkle with corn chips.Serves 8When chopping hot peppers, use rubber or plastic gloves to protect your hands.
