1 30 oz tub ricotta
1 1lb chub of turkey sausage
1 8 oz package of fillo
6 Tbsp fat free sour cream
1 bunch baby spinach
2 onions, chopped
4 Tbsp olive oil
4 tsp each-basil, cilantro, sage, rosemary, red pepper flakes, garlic and any other spices you like

Here is how you make Sausage, ricotta, fillo bake:

Mix ricotta and sour cream. Add about 1-2 tsp of each spice you are using. Put in refrigerator. Saute chopped onion in 1 Tbsp olive oil and 1/2 tsp of each spice until cooked through.Lightly wilt baby spinach in olive oil with a sprinkle of each spice. I have always had to do the spinach in several batches.Fry sausage like you would hamburger for tacos with remaining spices until completely cooked. Mix with onions.Now you layer the fillings and the fillo. You can use a 13x9 cookie sheet and place a layer of fillo (5 sheets), the sausage, another layer of fillo, the cheese, another layer of fillo, the spinach, and a final layer of fillo. Bake for 35-40 minute and check to see if the fillo is getting overdone. You can put foil over it for the first 30 minutes of cooking.Alternatively you can mix all the filling ingredients together and the just alternate fillo and filling. I used a 13x9x3 casserole dish when I did it this way. Bake for 40 minutes.
