2 links Italian sausage, casings removed
2 cups zucchini, chopped
1 medium onion, chopped
1 cup rice, cooked
1 can Italian diced tomatoes
6 oz cannned mushrooms, drained
1 1/2 cups shredded Italian blend cheese

salt & pepper to taste

1 Tbs butter, melted
1/2 cup Panko breadcrumbs
2 Tbs grated parmesan cheese


How Do I Make Sausage Zucchini Bake?

Here is how you make Sausage Zucchini Bake:

Preheat oven to 400 degrees. Heat non-stick skillet to medium-high. Break up sausage and brown, cooking through. Drain on paper towels. Add onion and zucchini to skillet, ccoking until crisp tender. Return drain sausage to pan along with tomatoes, mushrooms and seasonings, heat through. Place mixture in sprayed baking dish, stir in shredded cheese. Stir together melted butter, panko and grated parmesan. Top casserole with breadcrumb mixture and bake at 400 degrees for 20 minutes or until golden.
