1/2 cup cooking oil
1/2 cup flour
4 cloves garlic. finley chopped
3 bay leaves
1/4 tsp allspice
1/4 tsp cayenne pepper
1 tsp dried basil
1/4 tsp powered cloves
1/2 tsp poultry seasoning
1 tbsp. salt
6 shakes black pepper
4 tbsp. Worcestershire sauce
4 drops tobasco sauce
5 green onions finley chopped (optional)
2 cans (10 1/2. oz) beef broth or consmme'
1-1/2 cans water


How Do I Make Duck and sausage gumbo?

Here is how you make Duck and sausage gumbo:

Cook and cube duck, I used left over. brown the turkey sausage and warm duck. Add vegetables and cook a few minutes. remove from pan and use the pan (iron pot is best) to make roux. Make a medium dark roux by combining oil and flour and browning slowly. att beef broth to thin, add meat and vegetables back to pot after roux color is obtained, add spices. stir mixture well and adjust heat to simmer. Cover and cook for around an hour. At the end of cooking add Tabasco, check for salt pepper, add chopped green onions and let sit for 5 minutes. serve over rice.
