1/2 c Tomato Paste
1 c Tomato Sauce
Mrs. Dash or other dried herbs to taste
1 Eggplant, fresh, cubed
4 oz Reduced Fat Feta Cheese
1/4 c chopped green bell pepper
1/2 c chopped fresh mushrooms
1 medium onion, chopped
1/2 tsp salt


How Do I Make Eggplant and Sausage?

Here is how you make Eggplant and Sausage:

Put the onion and salt in a nonstick sautee pan over medium-low heat and cook until the onions start to soften, about 5 minutes. Add the eggplant, pepper and mushrooms, increase heat to medium, and continue cooking 5 minutes, stirring occasionally, Mix the tomato paste, tomato sauce, and Mrs. Dash and add the sauce to the pan, stirring to coat all the veggies. Cover and simmer 10 minutes, or until eggplant softens to your liking. Uncover, add the cooked sausage and cook just until the sausage is heated through. Top with feta just before serving.
