1 cup rice
1 pound dry black eyed peas, soaked overnight
4 cups chicken broth
2 bay leaves
1 (10.5-ounce) can chopped tomatoes and chiles (Rotel)
1 bunch of collard greens or kale, chopped
2 stalks celery, chopped
1/2 teaspoon ground thyme
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Here is how you make Hoppin' John w/Sausage and Greens:

Makes 10 servings.Soak black-eyed peas for about six hours, discard the soaking liquid and then just cover in fresh water.In a six-quart Dutch oven, saute the onion and garlic with the bacon and sausage over medium heat. When the meat is browned and the onions are translucent or lightly caramelized, remove. Don't drain the bacon grease.Add the butter and rice and stir until coated. Continue toasting rice, stirring constantly, 3-5 minutes "until you smell nuts." Remove the rice and set aside.Return bacon, onions and sausage to the pot and add the peas, broth and tomatoes (Rotel) with the bay leaves and a bit of salt and pepper. Cover tightly and place the Dutch oven in an oven preheated to 350. Cook one hour.Remove from the oven, taste and season as desired. Add rice, celery and chopped greens. Give it one good stir, replace the lid and return to the 350-degree oven for 30-40 minutes, until rice is cooked.Turn everything out into a serving dish and let rest 10-15 minutes.
