3 to 4 medium to large onions, thinly sliced

2 to 4 Tbs Extra Virgin Olive Oil

4 Cups coarsely chopped fresh mushrooms

3/4 Cup chicken stock or broth

2 Lbs turkey sausage, casings removed

Your choice of fresh leafy herbs: oregano, thyme, tarragon, etc. Approx. 1 tbs. when snipped.

Here is how you make Mushroom Sausage Fresh Herb Skillet:

Over medium heat, saute onions in olive oil until caramelized. Transfer to plate. In same skillet, up the heat to medium high and saute mushrooms until golden and slightly crispy edges appear. Add onions back into the skillet with the mushrooms. UP the heat to high and add the chicken stock. It will instantly steam and then turn to boil. Reduce heat to a simmer after about a minute. Let simmer about 5 to 10 minutes.Transfer mushrooms mixture back to plate.In same skillet, over medium high heat, brown the turkey sausage. Reduce heat to medium and completely cook the turkey through. Add mushroom mixture back to skillet. Lower heat and stir together. Salt, pepper to taste. Scatter fresh herbs over the dish.
