1 C. chicken stock (I use homemade so it's no-sodium, but you can use a low-sodium version if you don't have your own on hand)
3 C. water

1/2 C. cold water
1 heaping Tbsp corn starch
1&1/2 C. fresh spinach leaves, ripped

Here is how you make Sausage and Carmelized Onion Capellini Skillet:

In a skillet on medium heat, heat sausage and onions until they start to lose their juices. Add spices and white wine and cook for 5 minutes. Add garlic and cook until fragrant, about 2 minutes.After sausage chunks have started to brown and the onions are beginning to carmelize, add chicken stock. Stir until bubbling, then add water and pasta.Allow to cook at a low boil for 7 minutes.Combine the cold water and the corn starch, stirring completely to combine. Add to the skillet, stirring until the mixture is completely integrated and the liquid begins to thicken. Remove from heat. Stir in spinach until it wilts.
