# chicken sausage, 4 links (I use my grocery store's in-house organic brand)
# 8 oz Shrimp, cooked or raw-peeled and deveined
# Onions, raw, 1 cup, chopped
# Garlic, 1 clove - minced
# Basil, 2 tbsp - minced or dried
# Honey, 1 tbsp
# Red Wine, 2 fl oz
# Rosemary, 1 tbsp
# Olive Oil, 2 tbsp
# Spinach, fresh, 1 package (10 oz)
# 2 cans tomatoes, red, ripe, canned, whole, no salt added - BLENDED in food processor (Or use crushed tomatoes)
# Red Ripe Tomatoes, 1 cup, chopped or sliced


How Do I Make Sausage and Shrimp?

Here is how you make Sausage and Shrimp:

Coat large skillet with oil, preferably cast iron skillet. Heat to med-high. Add garlic and simmer for about a minute. Add onions, honey, basil, rosemary and chopped tomatoes. Simmer until onions are clear. Stir frequently to keep from sticking. Add canned tomatoes, stir and turn down to simmer on low-med heat, uncovered. Stir occasionally to keep from sticking and forming hot spots.In another frying pan, again cast iron preferred, heat olive oil to medium heat. Add chicken sausage links, whole. Add Red wine. Let simmer. The sausages will turn a purplish color from the wine. This is normal. When skins are becoming browned from cooking, turn sausage (about 4 or 5 minutes). When both sides are brown, remove sausage from heat and place on a heat resistant cutting board. Cut sausages into 1/4" wide pieces. They will not be cooked all the way. Return sausages to pan, add shrimp. Saute until shrimp are pink and sausages are throughly cooked. Transfer sausage and shrimp mixture to red sauce and continue to simmer.Using the same pan in which the sausage and shrimp were cooked, add entire bag of fresh spinach. Using tongs mix spinach until it is just wilted and throughly coated. It will reduce in size significantly.To serve:Divide spinach into 4 serving, create a "bed" on each plate. Cover each bed with Sausage, Shrimp Red Sauce. Serve immediately.This freezes well and makes even better left overs.
