1 can black beans, strained and juice reserved
1 can diced tomatoes
1 large green pepper, diced
1 medium onion, diced
2 tbsp extra virgin olive oil
1 pkg. low-fat smoked sausage, sliced thin
2 cups shrimp, thawed, uncooked
4 cloves of garlic
cajun seasoning to taste

Here is how you make Shrimp and Sausage Etoufee:

Saute' onion, garlic, and peppers in olive oil until tender. Add shrimp, sausage, tomatoes (including juice), and black beans (without juice). Slowly add in cajun seasoning until you get the desired taste. Simmer for about 20 min on medium heat. If your sauce isn't thick enough, you can add in some of the black bean juice to help thicken it. Serve over brown rice and enjoy. Makes 5 servings of 1 cup each.
