1T cumin
1/2tsp. cayenne pepper

1/2 cup diced tomato (fresh or canned)
1 large bell pepper (green)
2 stalks celery, sliced 1/4" thick
4 green onions, sliced thin
1cup chicken broth, low sodium
1 lb. cooked peeled shrimp

in heavy bottom pot w/ lid melt butter over medium heat. add sliced sausage & cook, stirring for 5 min. add seasonings. saute spices for 1 min. & add tomatoes. cook stirring few min to let some liquid evaporate. add green bell pepper, celery, & most of green onions (reserve some for garnish) cook, stirring for 5 min. stir in rice & mix well. add stock, turn to high & bring to simmer. reduce heat to low, cover pot & cook 45 min. remove lid & check rice: if still firm, cook longer. when rice is tender, add shrimp, stir in & cook covered 5min. serve in bowls with leftover green onion as garnish.
