1 Medium Onion - chopped
2 garlic cloves - minced
1/2 cup or about 4 ounces of mushrooms - chopped
1 28 ounces of peeled tomatoes (I used 6 large raw tomatoes - blanched, skins removed and chopped)
3/4 tsp salt
1/2 tsp black pepper
1/2 tsp crushed red pepper flakes
1 bunch Kale (stems removed, rinsed and torn into pieces) (or about 8 cups or most of a large bag of kale)
1 can of cannellini beans - drained and rinsed
1/3 cup half and half
12 ounces Farfelle pasta
4 TB Pecorino Romano

Here is how you make Farfelle with Spicy Sausage and Kale:

1) Cook crumbled sausage in oil (do not drain) in very large pot.Remove sausage with slotted spoon and set aside2) Start to heat water in a different large pot for pasta3) Cook onion and garlic in remaining oil about 3 mins4) Add Mushrooms - cook another 5 mins5) Add tomatoes with all their juice, beans salt, pepper, red pepper flakes6) Blanch kale in large pot of boiling water for 5 minutes- Drain7) Water for pasta should now be boiling, add pasta and cook to package directions (al dente for me - about 10-11 minutes)8) Add Kale and Sausage to pot with tomato mixture.9) Simmer sauce for about 10 minutes10) Remove from heat and stir in half and half.11) Serve in pasta bowls with cheese sprinkled on top.Serving Size:?8 Large servings
