Remove casings from sausge. Saute onion and sausage in melted butter (reserve 1t butter), breaking up sausage. Drain excess fat and butter, grate in 1 clove garlic. Add in shredded zucchini and simmer on low. Cut tops off and seed 8 colored bell peppers. Parboil till soft (though I usually do this on the stove top I microwaved them for 3 minutes this time in two batches of 4). Set aside till slightly cool. Prepare stuffing, using only the 1t butter (again I used the microwave for ease). In large bowl, add sausage mixture, stuffing, and shredded cheese. mix to combine.
