1/2 tsp Oregano

Here is how you make Sausage and Quinoa Stuffed Acorn Squash:

Preheat oven to 350 degreesCut the squash in half and remove seeds. Place in a baking dish, cut side down, with about an inch of water. Bake in the oven for 40 minutesWhile the squash is baking, brown the sausage. Remove from the pan and saute the onion, carrot, apple, garlic and celery in the same pan, seasoning with salt and pepper. Return the sausage to the pan. Stir in the quinoa, sunflower seeds, When the squash has baked, discard the water and turn the squash over. Stuff with the sausage mixture. Return to the over for about 20 minutes.
