Coat pork, shake off excess.Heat pan with Non-Stick EVOO spray, cook pork 2 - 3 minutes each side or until light golden brown and barely pink inside. Remove from pan.Add 1/2 Tbsp EVOO to pan. Add onion, bell pepper and mushrooms. Cook and stir 5 minutes. Add tomato. Make 'well' (opening) in the middle of the pan (move veggies to outside egdes of pan) add 2 Tbsp flour and Paprika and slowly add chicken broth , stirring constantly, to incorporate into a gravy, about 2 minutes. Stir veggies back in.
