Dry bacon, chop and set aside. Steam the head of cauliflower, until fork tender. Keep on low heat until shrimp is nearly ready, it cools fast once processed.Peel and de-vein shrimp. Put 1/4 stick butter and crushed garlic cloves into hot pan with bacon grease on medium heat. Add shrimp, and sprinkle with Old Bay. Toss shrimp in pan until pink. When nearly done, put cauliflower head, broken into florets, into food processor. Add 1/2 stick butter, heavy cream, sour cream, riccota cheese and cheddar cheese, and salt, pepper and garlic powder to taste. Process until smooth.
