This is a "Copycat" recipe for Outback's 'Shrimp en Fuego". It is very close to the original- though I have sauteed the shrimp instead of breading and frying them. I have also served this over brown rice and it was delicious. I think it might be nice over pasta too.

1 tsp * Garlic powder,

12 oz * Shrimp- peeled & cleanned
1 C * Mushrooms, fresh, sliced
24 * Cherry Tomatoes - halved
1/2 tsp *Thai Chili Paste
1 tsp *Garlic Minced
1 C * Heavy Whipping Cream
Salt & Pepper

Here is how you make Shrimp en Fuego - Copycat:

Cooking time does not count time required to bake potato.Bake one medium potato.While potato is baking, peel & clean 5 ounces per person. Sprinkle garlic powder over shrimp and let set.Slice the mushrooms and cherry tomatoes, and mince a garlic clove (2 if you love garlic) .When your potato is done, heat skillet and melt butter and olive oil at medium heat. Place shrimp in the skillet and let sit on 1st side till nicely pink and slightly carmelized- turn over and cook until nicely pink and slightly carmelized Add your salt, pepper and minced garlic while you are cooking shrimp's 2nd side - total time should be about 2 minutes per side. (Depends on size and temperature of shrimp).Add cherry tomatoes and mushrooms and cook 2 more minutes. Add Whipping cream and simmer just till it thickens a bit - about 2 minutesTo Serve: Split baked potato in half and squeeze to loosen potato. (Outback carves out a slight hollow in the center of each half). Ladle 1/2 sauce over each potato half.Options: If you like onion- finely dice 1/2 C onion and brown while you cooking shrimp.A very nice alternative is serving over brown rice.
