Preheat oven to 450 degrees. Spray a large jelly roll pan with nonstick spray.Put flour on one small plate. Put egg on another plate & beat. Put coconut & crackers on third plate. Dip shrimp in flour, then egg, and then coconut mixture. Put in pan. Repeat. LIghtly spray shrimp with nonstick spray. Bake about 5 minutes, until golden brown.
