1 clove Garlic
1/4 cup Butter, salted
1/2 cup Heavy Whipping Cream
1/2 cup pureed roasted red peppers
1/2 cup Parmesan Cheese, grated

1. In a food processor, puree the shrimp.2. Sautee the onions in a little butter until translucent.3. In a large mixing bowl, combine the shrimp, crab, nutmeg, lemon zest, parsley, egg yolks, onions, Ricotta, and Parmesan. Mix thoroughly, try not to break the crab up too much. Set aside.4. Slice the zucchini lengthwise and cook until flexible.5. Lay the zucchini in a pan and pipe the filling across the zucchini. Roll the zucchini and arrange neatly in a baking dish.6. Sautee one chopped clove of garlic in butter. Add heavy cream and roasted red pepper. Heat over medium heat.7. Once the sauce is hot, add parmesan cheese to thicken (approximately 1/2 cup).8.
