Thaw shrimp if frozen. Pull off the tails - or use "tail-off" shrimp. I like to slice shrimp in half the long way so that you get 2 long thin pieces of shrimp (kind of like butterflying them, except the two pieces are not attached.)Heat coconut oil in a skillet until hot, add the celery, and stir-fry until almost done (about a minute). Add the garlic and ginger and stir fry about 30 seconds. Add the shrimp and stir fry another couple of minutes or so until pink, and curled up somewhat, and done to your liking. Remove from heat and add the sesame oil and sprinkle with soy sauce.
