The ingredients for Low Country Shrimp and Grits are:

2 cups cooked grits
1 lb. shrimp, peeled & deveined
1/2 chopped onion
3 cloves minced fresh garlic
1 cup sliced red sweet pepper
1 cup sliced bell pepper
1 cup sliced yellow summer squash
1 cup sliced zuchini
1 cup sliced white mushrooms
1/2 tsp old bay seafood seasoning (to taste)


How Do I Make Low Country Shrimp and Grits?

Here is how you make Low Country Shrimp and Grits:

In a non-stick frying pan, saute onion and garlic in the olive oil until tender. Add peppers, yellow squash and zuchini, stir and cover. Cook until desired crispness. While mixture above is cooking, cook grits in a separate saucepan according to package directions. (I recommend not adding salt to the grits though) Set aside.Add shrimp and old bay seasoning to the vegetable mixture, stirring lightly as you would a stir fry. Leave uncovered at this point. As shrimp turn pink, add in the mushrooms, cooking about 3 to 5 minutes. Reduce heat to low or simmer to keep hot.Serve 1 1/2 cups of the shrimp & vegetables over 1/2 cup of cooked grits.
