1 lb lg. raw shrimp (peeled & deveined)
3 T butter
1 medium onion chopped/minced fine
3 cloves garlic chopped/minced fine
1.5 tsp Old Bay Seasoning

4 cups chicken broth
1 cup dry quick grits
2 cups frozen spinach (thawed and drained)
1 cup pepper (diced & steamed)
1/2 cup grated parmesan cheese
Red Pepper Flake (optional)


How Do I Make TodrykTweaked Shrimp and Grits?

Here is how you make TodrykTweaked Shrimp and Grits:

1) Clean shrimp & set aside2) Peel & chop onion & garlic (I put mine in the food processor)3) Steam spinach & peppers (I cover mine and steam them together in the microwave for 4 minutes) Drain moisture from the cooked veggies.4)Pour chicken broth in stockpot and place on high heat5)When broth comes to a boil add grits and a pinch of red pepper flake (in my opinion it brings out the flavor without adding salt and does not make it spicy). Stir or whisk out lumps, cover and set on low for 5-6 minutes, stirring occasionally. 6)Place butter in saute pan on high heat. When butter is bubbling add minced onion & garlic and Old Bay. Cook for 2-3 minutes.7)Add cleaned shrimp to saute pan. Cook 2-3 minutes. Remove from heat.8) Add drained spinach/pepper mix to grits. Stir. 9) Add parmesan to grits. Stir.10) Add shrimp/garlic mixture from saute pan to grits mixture.
