1.5 lb Medium-size raw shrimp peeled and deveined
1/4 cup White wine

3/4 cup quinoa, dry
1.5 cups low-sodium chicken or vegetable broth

(Serves 5)Bring broth to a boil; add quinoa and return to a boil. Reduce heat and simmer for 15-18 minutes covered. Check the quinoa to make sure that water is absorbed; if not- drain. Fluff quinoa with fork and serve with shrimp (below) In a large skillet, heat the olive oil over low heat. Add the garlic, celery, carrot, onion, tomatoes, cayenne, half of the parsley, sugar, salt, and black pepper. Cover the pan and raise the heat to medium-low. Simmer the mixture for about 5 minutes, until the vegetables are tender. Add the shrimp, cover the pan and cook for 3 minutes.
