1 medium summer squash

2 tbs olive oil

Here is how you make Quinoa w/Shrimp and Portabella:

Slice summer sqaush and mushroom caps.Cook 1 cup Quinoa with 1 can drained peas and 2 cups water in rice cooker. Meanwhile, heat olive oil in wok on med-high heat. Start heating frozen shrimp, after about 3 minutes toss in squash seasoned with paprika and salt followed by sliced mushrooms. Reduce heat to medium, cover and simmer for 5 minutes. Stir mixture and test veggies for doneness, simmer for 5 more minutes or until done. Combine wok mixture (after draining excess - to desired consistency) with Quinoa and pea mixture when complete.
