Take tails off shrimp. ring water and boullion to a boil over medium-high heat; whisk in grits and half and half. Cook, whisking constantly, 7 minutes or till thickened. Remove from heat. Stir in 2 Tbsp Smart Balance spread and cheese. Keep warm.Melt remaining 2 Tbsp spread in a large skillet over medium-high heat. Add mushrooms, green onions and thyme; saute 3-4 minutes.
