This is a basic stir-fry that I like to make up when I want a quick healthy dinner. If you don't like shrimp you can always substitute chicken, beef or pork and any stir-fry veggies will do. Heat olive oil in large skillet or wok and stir-fry garlic for about 30 seconds. Add marinated shrimp (including dressing) and stir-fry until shrimp turns pink (approx. 3 mins). Remove shrimp from pan and add stir-fry veggies and water chestnuts. Stir-fry aprox 5 minutes or until crisp-tender.
