1 15 oz can chunky Pineapple
2 Tbl Pineapple Juice (from canned chunks)
8 oz Shrimp, peeled
1/2 cup Kikkomens Sweet and Sour Sauce
Spray Canola Oil

Here is how you make Lee Stein's Tropical Shrimp:

1. Assemble ingredients.2. Assemble spatula, knife, frying pan. three small bowls, basting brush3. Cook Zatarins Carribean rice according to instructions on box EXCEPT do not include recommended meat ingredient. Start the remainder of steps after rice has been cooking 20 minutes.4. Cut mangos into 3/4 inch chunks.5. Cut onions and bell pepers into 1 inch chunks.6. Open can of pineapple chunks and drain liquid into separate bowl7. Mix one 2 Tbl of the pineapple juice into 1/2 cup of Sweet and Sour sauce in small bowl and set mixture aside.8. Spray light coating Canola oil in frying pan.9. Baste pineapple and vegetables and shrimp with a small portion of the Sweet and Sour Sauce mixture.9. Stir Fry (or grill) peppers onions and pineapple chunks until onions and peppers are just turning just turning soft but not soggy.10. Add Mango and stir fry (or grill) until warm.10. Remove fruit and vegetable mix from frying pan and place in small bowl keep in warm oven.11.Spray pan again and stir fry (or grill) shrimp until they are pink. Don't overcook. 12. To serve: place serving of rice in the center of two dishes and then spoon 1/2 vegetable and fruit mixture over rice on each dish. Arrange shrimp attractively over the top of the vegetables.13.
