In a bowl, combine zucchini, pine nuts, onion, and 2 TB balsamic vinegar. Toss to combine. Season with salt, pepper, and italian seasoning.Toss shrimp with remaining balsamic and salt & pepper.In large skillet, heat olive oil over medium heat. Pour in Zucchini mixture. Cook 1-2 minutes, then reduce heat to medium-low and cover. When Zucchini starts to soften and onion starts to become translucent (between 20 and 25 minutes), uncover. Add tomatoes and shrimp.
