Make the soup: 1. Cut the veggies in large pieces2. Place all veggies in the bottom part of the double-levelled pot3. place the chicken on top and throw in the seasoning4. Cover with water5. Bring to a boil and then reduce to a simmer for 1 1/2 hours6. Add the second level and pour in the couscous and salt it.7. Cover for 5-10 minutes, checking it often.8. Remove couscous from heat, place in bowl and let sit for 5 minutes.9. Fluff the couscous with a fork and return it to the pot10. Repeat 2 more times11.
