3 carrots, finely diced
3 ribs celery, finely diced
2 medium cauliflower heads, cored and roughly chopped
2 small russet potatoes, diced
4 tablespoons chopped fresh parsley
2 cups whole milk
1 cup half and half
1 tablespoon salt
ground black pepper to taste
1 cup sour cream at room temperature


How Do I Make Cream of Cauliflower Soup?

Here is how you make Cream of Cauliflower Soup:

Melt 1 stick butter is stock pot over medium heat. Add onions and cook until translucent, about 3 minutes. Add carrots and celery and stir and cook for a couple additional minutes. Add cauliflower and potatoes and mix in, then cover and cook over very low heat for 15 minutes. Add parsley and chicken broth and simmer for 15 minutes.In the meantime, make a simple white sauce with 6 tablespoons of butter melted over medium heat. Add 6 tablespoons of flour whisking in and cooking for a few minutes. Add the milk, whisking to combine, and whisk until thickened. Remove white sauce from heat and add half and half. Pour this mixture into soup pot and add salt and pepper to taste. Simmer for 20 to 30 minutes.
