Save a few of the smaller ones to garnish soup in the very final stages of cooking. Mince shallot. Add both to non stick skillet and saute with butter slowly until mushrooms start to give off their liquid. Continue to cook until they are quite dry. Add flour 1 Tablespoon at a time and stir until well incorporated. Add chicken stock and cook slowly until thickened. Add the can of evaporated milk and again heat slowly til thickened. Season with salt and pepper to taste. Add what ever final mushrooms you have to garnish with and cook a few more minutes stirring carefully to not let soup stick or burn. I usually use small mushrooms such as Enoki to do this final step.
