In a large stock pot, saute the onion , celery and carrot in the butter, add ham and heat through. Throughly rinse peas and add to pot. Cover with 12 cups of water. Bring to roiling boil and boil for 30 mins. Turn down and simmer at least another 30. Make sure peas are tender.
