A German-Italian couple, who lived next door to me one summer during an ESL course in England, shared this recipe with me. All root vegetables with only the teensiest amount of butter and salt per serving, this is one of the most wholesome, warming soups I've ever experienced. Great in winter and fall, this soup is sure to please all - okay, maybe not the kiddies but there are always exceptions!

2 C. lentils (green & red add great colour)
1.5 C chopped carrots
1 sweet onion, chopped
2 leek stalks, washed
4 cloves of garlic
1 tbsp butter
salt to taste




How Do I Make Italian Lentil Soup?

Here is how you make Italian Lentil Soup:

Preparation: Soak lentils for 5-6 hours, or until all water is completely absorbed.When lentils are near ready, wash leeks. Chop leeks from root to about midway (best flavour). Dice carrots, onion and garlic (don't mince garlic). Cook: Melt butter in large pot over medium heat. Add onions. Saute until clear. Add carrots and garlic. Toss in butter for 2 min. Add leeks and about 1-1.5 tsp salt. Toss all vegetables until completely and evenly covered in salt and butter mixture. Add lentils and cover with water. Simmer on low for 20-30 min, or until carrots are to liking. I like mine with a tiny bit of crunch still in them. Add more salt if desired.
