I was home sick today and while Pinterest'ing my sickness woes away debating whether I would be trekking to work, I found this picture of Lasagna Soup (original recipe featured on this foodie blog - www.joanne-eatswellwithothers.com/2012/10/recipe-lasagna-soup.html). But the recipe (while very nice and simple) didn't quite ring of "LASAGNA" to me.. in fact it was missing the key part of a good gooey layered treat.. the ricotta cheese and the fresh "mozzarel!".. and then I thought of another recipe featured in this month's Bon Appetit for Ricotta Gnudi and Pomodoro sauce (www.bonappetit.com/recipes/2013/02/ricotta-gnudi-with-pomodoro-sauce) and this recipe was born... a warm bellyful of lasagna flavors that was perfect to warm my body and soul.
