1 ham steak, diced (approximately 20 oz)
1 tbsp. vegetable oil
2 medium onions, diced
1 medium carrot, diced
2 quarts water
1 tsp salt
1 tsp pepper
1 tsp dried thyme
2 bay leaves
2 medium carrots, sliced
2 large potatoes, cubed
1 cup celery, sliced
2 tbsp lemon juice

Here is how you make Lentil Soup with Ham:

Use a dutch oven to make this a one pot recipe.Soak lentils in water overnight, then drain.Heat ham over medium heat, about 10 minutes until excess water evaporates and ham begins to brown. Remove from pan.Add vegetable oil over medium heat, bring to shimmering. Add onions and diced carrot and saute until beginning to soften, 3-5 minutes.Add water, salt, pepper, thyme and bay leaves. Bring to a simmer, scraping the pan to incorporate brown bits into liquid for flavor.Add ham, drained lentils, celery, sliced carrots and diced potatoes.
