Heat canola oil in large dutch oven. Add meatballs, cook and stir 5 minutes, or until browned. Remove from pan, rest in refrigerator while preparing soup. Drain excess fat in pan. Add chopped onion, brown 1 minute. Add chopped tomatoes and all juices from can. Add beef broth. Bring to a simmer. Add celery, carrots and spices. Return meatballs to soup. Simmer for 15 minutes. Add pasta and spinach, simmer 15 minutes more, or until pasta is tender. Add salt and pepper to taste.Serve with additional fresh grated parmesan cheese sprinkled on top of soup.
